Housed in a 200 yr-old former dairy barn, Eric Miller’s Chaddsford Winery was part of the original William Penn Estate. The winery has been around for 25 years, and though it started small, it now produces about 30,000 cases annually — all of it sold locally, and mostly out of the tasting room! Price points range from $12-40. Most of the wines are bottled as varietals: Pinot Grigio, Chardonnay, Pinot Noir, Cabernet Sauvignon, Chambourcin, and Merlot - mostly from Estate or local vineyards, though the ‘05 Pinot Grigio was 70% outsourced from New York. In addition, Chaddsford also works with a variety of other grapes, including: Petite Verdot, Cabernet Franc, Barbera, Sangiovese, Dornfelder, Seyval, and Vidal. Some of these are bottled varietally; others are in blends. Of course, there were the usual sweet/seasonal wines as well, made from Niagra, Steuben, Concord, and Vignoles.

Join us as we talk with Eric about making wine in Pennsylvania, where we find that acidity seems to be of little of no problem here and grapes are picked at substantially lower brix (21-23) than they are in CA . Thus, alcohols ran lower as well - from the low to the high sides of 13%. We had a good time, and one of the hoots of the visit was seeing a small plaque that Eric had placed on a wall in the winery. It was a quote from our own Peter Cargasacchi. Here we are on the other side of the country and what do we find? One of Peter’s myriad mantras about God, sex, drugs, reincarnation and terroir…and it’s FRAMED! Just more affirmation that the world is a smaller place than we think. And yet, as I recall, they did not ship to California.

Goosecross Cellars releases 2005 Napa Valley Cabernet Sauvignon

Goosecross Cellars releases 2005 Napa Valley Cabernet Sauvignon!

"What a great year to debut our Estate vineyard! Great looking fruit just packed with flavor..." recalls Geoff Gorsuch, our Winemaker, of our first estate harvest since replanting in 2003. The 2005 vintage presented almost textbook conditions with warm, sunny days and cool, foggy nights throughout the growing season. The new vineyard is planted to 3 different clones of Cabernet Sauvignon, 2 clones each of Merlot and Cabernet Franc, plus a bit of Petit Verdot. "...If this first vintage is any indicator, we've got a pretty darned nice vineyard on our hands."

"I really like the way this wine came into balance. The Cabernet from the young vines on our estate gave us lots of bright, vibrant fruit character and then I blended in some mature Cabernet from our Howell Mountain vineyard for added depth and complexity." Geoff guided the wine through a warm fermentation to bring out the rich boysenberry, black cherry, blueberry and dark chocolate. Layers of ripe plum, sweet strawberry, vanilla spice and toasty oak linger on the palate, finishing with round, polished tannins.

This Cabernet is the perfect partner for grilled steak or roast rack of lamb. It's wonderful with slow-cooked dishes like osso-buco or a savory beef stew. Geoff's favorite comfort food is Colleen's recipe for Short Ribs with Coffee Cocoa Sauce. "The coffee and cocoa in the sauce add a subtle richness and with a glass of the Cab, it just feels like home."

There are many more recipes to choose from in Colleen's Kitchen recipe collection.

Mid Atlantic Wineries

We are always on the lookout for opportunities to get out and visit some other wine regions - both in the US, and around the world. Well, we finally found some time to visit a few wineries and vineyards on the East Coast, in the Mid-Atlantic states. So, join us for a recap of our all-too-brief trip through Pennsylvania, Maryland and Virginia, because what we found was something of an eye-opener to us.

The wines were more European in style and seemed to be a fascinating bridge between “old world” and “new world,” almost in direct proportion to their geographic location between Europe and California. Yet, these wines are almost undiscovered by most, especially on the West Coast. Largely due to shipping or low production issues, the wines are sold locally, and mostly out of the tasting room.

The winemakers we encountered seemed doubly dedicated to producing good wines, if for no other reason than the challenge of growing wine here seemed to hold its own rewards. And while some of them could envision being referred to as playing in the Minor Leagues - they hastened to add proudly that they were not making Minor League wines. It was beginning to sink in, and at one point it occurred to us: Hey, these guys aren’t undiscovered - they’re hiding out as part of some winegrower witness-relocation program.

Milady’s Standard: Fundamentals for Estheticians

Milady's Standard: Fundamentals for Estheticians Author: Joel GersonBetter textbook than prior yearsThis is for esthetician students. The information is basic and well organized. The photos sometimes do not follow the text but it reads easily. This is a good all around Beauty School bookMost of the chapters are well written and understandable. I have found some discrepancies in the information, and feel that the book could have been edited a little better. The book explains sanitation but does not go into the correct method of sanitizing all items that one would use during a service. The material is quite dry, and could really use something to get the student excited about the occupation that they have chosen. more...

Low Fat Digest - Issue 27

We're still way into the barbecue season. If you offer lean meats and veggies, you have to be careful not to spoil everything with a fatty mayonnaise or ketchup sauce.

Fairest

Fairest Author: Gail Carson LevineA disappointment from a great authorI know that Gail Carson Levine fans will want to get all over my case for not liking this book, but I just couldn't get into it. I tried, I really did, but I couldn't even both finishing it. After more than 100 pages of hoping it would get better, it never did.

I felt the plot was forced, and I thought the movement from Aza being a commoner to all of a sudden the lady-in-waiting of the queen was a bit of a stretch. Aza's infatuation with the prince was so obvious that there was no need to really develop their relationship because the outcome was heading in the exact same direction of the relationship in Ella Enchanted.

I don't know how anyone else could get through this book that is written by an author who can do such great work. I was totally disappointed and glad that I only checked it out of the library rather than actually buying it.Another great book from a great authorFor fans of Gail Carson Levine's other fantasy novels (Ella Enchanted, Two Princesses of Bamarre), her newest, Fairest, will not disappoint.

Fairest is the story of the teenager Aza, who feels ugly and awkward in a land where beauty and song are prized above other qualities. While she has the most beautiful voice in the country, she is somewhat lacking in the beauty department. Through her association with a noblewoman who frequents her family's inn, Aza is invited to the royal palace for the wedding between the king and his bride, a commoner from another country. It is at the palace that she enchants the crown prince and is blackmailed into being the voice of the new queen, who cannot sing and will do anything to be the most beautiful and beloved person in the land.

Fairest contains echoes of the Snow White fairy tale, but is a unique story of its own. Levine is great at painting strong heroines, and creates a likeable and witty character in Aza. Aza grows through her trials and triumphs at the palace, as well as discovering for herself firsthand the pitfalls and advantages of being beautiful. Although she is horribly misjudged by others, she maintains a good heart and seeks to help others, even those who have betrayed her.

In direct contrast to Aza is Queen Ivi, whose jealous and insecure nature is the catalyst for most of the bad events in the story. While Ivi does act horribly throughout most of the story, Levine creates a villian that readers will sympathize with. You despise her actions, but you understand her motivation behind them - much like real life, where people are not black-and-white good or bad. This makes Fairest a good choice for older readers, but it will still provide good discussion for younger readers.

Another great story by one of my favorite authors. I hope Levine keeps writing for a long time! The Fairest of them All!I was so excited to see that Gail Levine had written another book. So when I saw it in the book store I snatched it right up. I couldn't wait to get home and start reading. And I certainly wasn't disappointed. It starts out with Aza who isn't very pretty, but she can sing beautifully telling about how she was taken in by the innkeepers who found when her "wench of a mother" abandoned her at the inn...
It has all the elements of a great fairy tale, a handsome prince and an evil queen. It's one of my favorite fairy tale fantasies, right up there with the North Kingdom by Jordan N. Danniels (my number one favorite book). So if you're looking for a good fairy tale to read don't pass this one by!
